Air Fryer Chinese New Year Snacks Recipe

Chinese New Year is just around the corner! Besides of earning red pockets (Lai See 利是), we love to celebrate this important occasion with our families and friends over food with different kinds of cakes (e.g. turnip cake or Lo Bak Go 蘿蔔糕), candies, savouries, snacks, etc. Calvin (@clai_eats) and I have decided to make a trip to Shau Kei Wan Market and do some Chinese New Year shopping, as well as buying some ingredients to make some easy and irresistible snacks with the use of air fryer. 
 
After shortlisting from a bunch of Chinese New Year snacks we both grew up eating, we have decided to demonstrate the making of three snacks with air fryer in an unconventional way, which also represents some of the popular Chinese New Year greetings: 
1) Golden Cashews with Salted Egg Yolk 炸鹹蛋腰果
- Chinese New Year greeting: Full house of gold and fortune|黃金滿屋

 

Ingredients

3 cups of raw whole cashews

6 Salted egg yolk

2 tablespoon of butter

1 tablespoon of sugar

1 teaspoon of salt

1 teaspoon of sesame seeds (optional)

Directions

Set Airfryer at 185C and preheat for 2 minutes

Rinse cashews and pat dry

Place into Airfryer and bake for 5 minutes

Cover salted egg yolk in plastic wrap

Steam for 10 minutes until cook

Take out cashews and toss lightly and bake for 3 more minutes

Mash egg yolk into crumbs and reserve for later use

In a medium heat pan, melt butter

Add egg yolk crumbs, salt, sugar and sesame seeds

Cook until soft and melty and sugar all melted

Add toasted cashews and mix for 2 minutes

Let cashew cool at room temperature and serve

Cashew can be placed in an airtight container and place in fridge for up to 1 week

2) Taro & Turnip Cake Balls 炸芋頭糕 x 蘿蔔糕球

Ingredients

Ready made Taro cake

Ready made Turnip cake

1/2 cup sesame seeds

1/2 cup 櫻花蝦 dried Sakura shrimp

2 egg white

Directions

Preheat Airfryer at 185C for 2 minutes

Separate egg white

Using a small spoon or ice cream scoop, scoop Taro and Turnip cake into a half circle

Coat cake balls in egg white

Drop Taro cake balls into sesame seeds and Turnip cake balls into Sakura shrimp

Spray cake balls with olive oil

Bake Taro and Turnip cake separately

Bake Taro cake balls for 8 minutes or until golden brown

Bake Turnip cake balls for 5 minutes

You can pre-make cake balls and reserve in the refrigerator

Bake when guests arrived and serve hot!

3) Sweetheart Crispy Shrimp Toast 心型炸蝦多士

Ingredients

1 lb frozen prawns with tail on (Defrosted)

5 slices of white bread

2 tablespoons of crab roe

1 tablespoon sesame oil

1 teaspoon rice wine

1 teaspoon salt

1 teaspoon white pepper

1 tablespoon of corn starch

2 tablespoons of chopped cilantro

1 tablespoon of olive oil

Directions

Pre-heat Air Fryer at 185 for 2 minutes

Remove crust from white bread

Cut diagonally to form 2 triangle

Using a scissors Cut a small triangle in the middle of the base of the triangle

Round off the two edges to form the half circle of the heart shape

Remove shells and cut the tail of the shrimp and reserve tail for later use

Smash and chop shrimp meat until smooth

Add crab roe, sesame oil, rice wine, salt, corn starch, white pepper and cilantro

Mix well and start to whip shrimp mixer

Mixer until firm with an elastic consistency

This is an important step to ensure firm texture of shrimp paste

Spoon shrimp paste onto the heart shape toast

Add shrimp tail towards the tip of the heart shape

Place into Air Fryer

Spray with olive oil

Cook in Air fryer for 8 minutes until golden brown

Serve Hot!
