Go Green Go White Matcha Lava Cookie

To be one with my Michigan State University roots, I created this Matcha Lava cookie to give it a Go Green! spirit.  A warm chewy cookie with a lava marshmallow center makes this cookie both decadent and irresistible.  Go State!


190g Cold butter

135g Granulated sugar

135g  Light brown sugar

75g Macadamia nuts

420g All purpose flour

2 1/2 tablespoons of Matcha powder

10g Baking powder

1 teaspoon salt

2 eggs

2 cup of miniature marshmallows


Pre-heat oven at 350F or 180C

Chop macadamia nuts into large chunks

In a mixer, beat butter until smooth.

Add sugar and light brown sugar and beat until combined

Add eggs one at a time and beat until combined

In a large mixing bowl, sift together all purpose flour, matcha powder, baking powder and salt.  

Mix dry ingredients in three parts into the wet batter. 

Add Macadamia nut and mix until just combined.

If batter is too soft, refrigerate for 30-60 minutes for easy application. 

Using an ice cream scoop, scoop cookie dough and roll into a ball.

Flatten the dough and place about 8 marshmallow into the center.

Cover marshmallow by pinching  the edges of the dough to form a ball, hiding all marshmallow inside. 

Flatten it slightly and place it on a baking tray lined with baking paper.

Place in hot oven and bake for about 18-20 mins depends on the size of the cookie.

Bake until slightly golden brown or cookie started to crack exposing gooey center. 

Serve hot for a lava center.  When chilled, place cookie in microwave for 30 seconds to recreate the lava center.
