Pancake Pie 牛肉煎餅

This is a fun recipe for the whole family to get involve.  In this recipe, I give you option to use your imagination.  Choose from beef and cheese, spinach and cheese or hazelnut spread to create fun yummy snack for the family.  Recipe of the dough is from 小高姐的 Magic Ingredients on youtube.  Her video and bread is amazining.

Ingredients:

Dough

400g 2 3/4cup all purpose flour

300g or 1 cup plus 3 tbs boiling water 

2g or 1 teaspoon salt

27g or 2 tablespoon vegetable oil

Filling:

Beef and Cheese

500g Ground Beef

1cup shredded mozarella cheese

1/2 cup chopped onion

1/2 teaspoon salt

1/4 cup chicken stock or water

1/4 teaspoon fresh ground pepper

1/4 teaspoon cumin

Spinach and Cheese

1 Cup Korean Spinach Salad (See this recipe)

1/4 Feta Cheese or any low fat cheese of your choice

Dessert

1/2 cup Nutella or Chocolate peanut butter

6 chocolate truffles

You can put any fillings you want, PB&J or even frozen mixed berries

Directions:

In a large mixing bowl or an electric mixer,  combine flour with half the boiling water.

Mix until dough is form and add remaining water.

Add salt and mix well until dough is formed.  

For humid environment, gradually add the remaining water until dough is form.  If dough is too wet, add flour.

Cover and let dough rest for 30 mins.

Add oil in dough and mix until combined and not sticky.

Let dough rest in refrigerator for another 2 hrs or longer.

Fillings:

Prepare your fillings by combining ingredients together.  Refrigerate 

Filling will be easier to handle if cold and firm.  Avoid using fillings that are too wet or watery. 

Making the pancake pie

 Flour your hands and gather a pingpong size dough.

Dust with flour, roll into a ball and press it flat.

Using a large ice cream scoop, scoop about 1/4 cup of filling and place on top of the dough.

Filling should be double the size of the dough.  

Slowing push and tuck filling into the dough in a circular motion until filling is fully submerged into the dough.

Gather the open end of the dough to close the gap to enclose the filling into the dough.

Pinch excess dough on top and press it flat.  Dust with flour to prevent from sticking to your hands or surface.

In a lightly oiled low to medium heat pan, pan fry pancake pie both sides until golden brown.  

Serve hot and enjoy!
