Ultimate Chocolate Cake (My Secret Recipe)
I have used this recipe for over 10 years and perfected it ever since. It is simply, decadent and moist. I am describing this chocolate cake, nothing else. Here is a video of how to make it! One important tip is do not over mix and make sure your baking soda and powder is fresh or your cake may deflate! Enjoy!
Make 24 cupcakes or one large 8" 4 layer cake
1 1/2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup of cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup of whole milk
1/2 cup of vegetable oil
2 teaspoons of vanilla extract
1 cup of boiling water
If you want coffee flavour, add 3 tablespoons of instant coffee
Preheat oven at 350F or 177C.
pre-grease 2, 8" pan or 2 muffin pan, rub butter and dust with flour.
In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda and salt.
Add eggs, oil, milk and vanilla, using an electric mixer or a whisk, mix well until smooth.
Add hot water (and instant coffee) and mix ( this batter will be runny like soup).
Pour into your pre-greased pan and bake for about 30-35 minutes until toothpick comes out clean.
Let cool or refrigerate before decorating.
